Hey busy mom! Is your toddler or pre-schooler driving you crazy with their haphazard eating habits? Well there is help, here are a few suggestions from quick and easy chicken dinners to help them eat more and complain less.
Chicken is versatile and most children cannot get enough of it, they don't like their food mixed up or chunky, they like to be able to identify their food, so keep it simple, finger foods are their best friends.
Try these recipe ideas:
1. baked drumsticks or wings with macaroni & cheese
2. chicken (drumsticks) with fries (baked)
3. chicken sandwich (avoid the breast), cut chicken in very small pieces or crush mix with mayonnaise on thin slices of brown bread
Serve in small portions and don't forget the ketchup!
Congratulations! You are on your way to a healthier, happier child at meal time!

Students and Healthy Eating
I am sure as students there is no time to think about food especially as it comes to the end of a semester. With all the deadlines for assignments, your bodies are calling for nutrients and sending signals to you in many ways that it needs attention, but regrettably it is us that suffer in the long run. We grab for that Red Bull, cups of coffee and other caffeinated beverages to keep us going but alas! this is only a short term fix and could be to your detriment.
Instead of the short term fix which could have long term repercussions, why not consider one pot meals, or cooking enough on the weekend that can be kept refrigerated or frozen to stretch and prepare in many other ways during the busy week. Take chicken for example, this versatile bird can be prepared in over 100 ways! One whole bird can last a few days if used in portions to create different meals. Try it and you won't regret it, at least your body will appreciate it as you will be more alert and rearing to tackle those stressful days!
